Pepperberry Pear Salad with Blackberry Honey Walnuts

150g rocket leaves or 1 oakleaf lettuce, washed and trimmed
1-2 Corella (or other in season) pears, cored, cut into thin wedges
100g packet whole walnuts
5 Tbs Blue Hills Blackberry Honey
3 Tbs Red Kellys Pepperberry Dressing
100g blue cheese, crumbled
1 tsp lemon myrtle herbs, sprigs picked

The lively yet sweet taste of the Tasmanian native pepperberry adds a delightful dimension to this fresh summer salad

Combine honey and walnuts in small saucepan, reserving some walnuts for the dressing. Stir over low heat until honey is toffee-coloured

Meanwhile, arrange leaves on serving plate with pears

Finely chop remaining walnuts, add to Pepperberry Dressing and generously drizzle over salad

Scatter over honey walnuts, cheese and herbs
