Quinoa Blini with Bill's Beetroot Marmalade

1/3 cup quinoa flour (45g)
¼ cup plain flour (35g)
1 tsp baking powder
1 egg lightly beaten
2/3 cup buttermilk
25g butter, melted
Olive oil spray
Jar of Bill’s Beetroot Marmalade
Tatsini, celerini, or other micro herbs
Sift flours and baking powder into a bowl. Gradually whisk in the egg and buttermilk until smooth. Stir in butter. Spray a large fry pan with oil. Heat over medium-high heat. Using 2 teaspoons mixture per blini, cook 6 blini for 2 mins on each side or until browned. Transfer to wire rack to cool. Repeat with remaining mixture.
Spoon or pipe on about a teaspoon of creme fraiche to each blini. Top with Bill's Beetroot Marmalade. Sprinkle with herbs and serve.
